What can I use instead of Scallion?
Scallion and Green Onion are the same ingredient under different names, so swap one for the other 1:1. Another option is Chive, 1:1; milder, no white bulb portion. The table below also lists Leek, White and Light Green Parts Only, Shallot and Ramps, 5 swaps in all.
| Swap | Ratio and notes |
|---|---|
| Green onion | Same thing, different name. Use it 1:1. |
| Chive | 1:1; milder, no white bulb portion How to use it: Add chives just before serving; they are a delicate herb and lose flavor when cooked. |
| Leek, white and light green parts only | about half by weight and always cooked; sweeter and much firmer, so it will not work raw as a garnish |
| Shallot | one small shallot per two scallions in cooked dishes; sharper raw, sweet once softened |
| Ramps | 1:1 in season; far more garlicky, so treat them as the stronger cousin |
