Can you freeze bell peppers? Raw or blanched

Can you freeze bell peppers? Yes, raw or blanched. NCHFP blanching times, the tray freezing method, how long they keep and what to cook with them.

Yes, you can freeze bell peppers, raw or blanched. Wash, seed and cut them, then freeze them as halves, strips or dice. They go limp when thawed, so cook them in fajitas, chili, sauces and casseroles. USDA FoodKeeper lists 6 to 8 months in the freezer for best quality. Blanching is optional.

Red, yellow and green bell pepper strips on a baking sheet ready to freeze, can you freeze bell peppers

Can you freeze bell peppers?

Yes, and it's one of the easiest vegetables to freeze. The National Center for Home Food Preservation (NCHFP) gives two options for bell or sweet peppers: heated, which is good for cooking, and unheated, which gives a crisper texture. Michigan State Extension says peppers can be frozen without blanching, but they're limp when thawed, so it's best to use them in cooked dishes.

So the answer depends on what you're making. For cooked dishes, freeze them either way. For raw use, the sources disagree: NCHFP says unheated peppers keep a crisper texture, and Nebraska says thawed peppers retain some crispness, while Michigan State says they come out limp. If you want real crunch, buy fresh.

How can you freeze bell peppers?

  1. Choose crisp, tender green or bright red pods. Wash them, cut out the stems, cut in half and remove the seeds.
  2. Leave them in halves, or cut into 1/2-inch strips, rings or dice.
  3. Either package them raw, or blanch first (table below), cool promptly in ice water, and drain well.
  4. For loose pieces, freeze them on a baking sheet first. University of Nebraska-Lincoln calls this tray freezing: spread peppers in a single layer for an hour or longer until frozen, then move them to a freezer bag and press out the air.
  5. Seal, label and freeze.

Halves3 minutes
Strips or rings2 minutes

Those times come from NCHFP's blanching chart. NCHFP calls the heated pack good for cooking and the unheated pack crisper, so pick by how you'll use them, though Michigan State says blanching helps maintain crispness. Headspace depends on the method: NCHFP says to pack blanched peppers with 1/2 inch and raw peppers with none, and Penn State notes that peppers pack loosely and don't need extra headspace.

How long do bell peppers keep in the freezer, and how do you thaw them?

QuestionAnswer
Best qualityUSDA FoodKeeper lists 6 to 8 months for peppers, and NCHFP gives vegetables 8 to 12 months. Use the shorter window
Safe to eat after that?Yes. Frozen food at 0°F stays safe indefinitely; the limit is quality
ThawingCook straight from frozen, or thaw in the refrigerator (NCHFP)

Our bell pepper storage page lists about 240 days for the freezer, which is 8 months, the top of FoodKeeper's 6 to 8 month range.

When in doubt, throw it out. USDA guidance is that frozen food kept at 0°F stays safe, so the time limits here are about quality. If something smells off, looks slimy or was thawed on the counter, don't taste-test it.

What changes when you freeze bell peppers, and what are they good for?

Texture. Frozen peppers lose their snap and turn soft. The flavor is still sweet and a little grassy, which is why they shine in sautés, fajitas, stuffed pepper filling, chili, soups, pasta sauce, omelets and sheet-pan dinners.

Add them to the pan straight from the freezer and cook off the water for a few minutes. Don't thaw first, or you'll have a puddle. If you want raw crunch for a veggie tray, buy fresh. Our bell pepper storage page shows how long a whole fresh one lasts in the fridge first.

Bell pepper freezing FAQ

Do you have to blanch bell peppers before freezing?

No. NCHFP lists an unheated method, and Michigan State says peppers can be frozen without blanching. NCHFP recommends the blanched pack for cooking and the raw pack when you want a crisper texture.

Can you freeze bell peppers raw?

Yes. Wash, seed, cut and package them raw with no headspace, as NCHFP directs. Tray freezing keeps the pieces from clumping together.

How long can you freeze bell peppers?

USDA FoodKeeper lists 6 to 8 months and NCHFP's general window is 8 to 12, so use the shorter one. They stay safe longer, but texture and flavor fade.
