DIY HelloFresh: how to build your own meal kit at home

A meal kit is four things: a small fixed set of dinners, ingredients bought in exact quantities, everything portioned into one bag per meal, and a card telling you what to do. You can build all four in about an hour on a Sunday. The hard part is the quantities.

A commenter in the r/hellofresh cancellation thread put the project in one line: "make a cook book with your favorite meals and shop yourself". What you are replacing runs $10.99 to $12.49 a serving plus $10.99 shipping per box, as of September 2026, about $76.93 a week for two.

What is actually in the box

There is nothing in a kit you cannot buy or do yourself: dinners somebody else chose, ingredients somebody else measured, one bag per meal, and a card giving the order. Three of the four are easy at home. The measuring takes practice, and it is why most DIY attempts stop by week three.

Step one: pick five dinners, not seven

Five covers the working week and leaves two nights for leftovers. Seven means seven ingredient sets and a fridge you cannot get through.

Choose two fast dinners, two that take longer, and one flexible base such as pasta or rice bowls that absorbs whatever is left. Pantry staples with lists included is where to find candidates, and the weekly planning method covers giving each a night.

Step two: work out the exact quantities (and why this is the part that goes wrong)

This is where DIY kits fail. A recipe wants 400 grams of sausage and the store sells 500-gram packs. Do that five times and you either run short mid-week or finish with a shelf of remainders nothing will use.

The fix is arithmetic before you shop, not in the aisle. List every dinner's amounts, add them by ingredient, round to pack sizes you can buy. Then give each remainder a job: half a cabbage becomes Friday slaw, extra rice becomes a fried rice base. When a quantity will not work, swap the ingredient rather than buy a third pack. The substitution guide covers common exchanges, and custom substitution rules are Pro.

Step three: one shop, one list

Combine the five dinners into one list sorted by store section, not by recipe. Check the cupboards first, because the fastest way to overspend is buying a second jar of something. Then buy to the list and refuse anything with no dinner attached. The free shopping list builds itself from the recipes and sends the lot to a Walmart cart in one tap, though any store works.

Step four: prep and portion into bags

Do the boring hour while the shop is still on the counter. Chop the vegetables, mix the sauces, cook the grains that hold, then pack and label one bag per dinner; good labeling habits save Thursday from mystery vegetables.

Prepped is not precooked, and cooking everything on Sunday is how a week starts tasting like leftovers; meal prep that still tastes fresh covers what to cook fully. Keep cold food cold while you work: perishable food can sit at room temperature for a maximum of two hours before it has to go back in the fridge, and above 90 F that window is one hour, per USDA leftovers guidance.

Step five: the card (how to write a three-line method you will actually follow)

Nobody reads a full recipe at six o'clock. Each card needs three lines: heat and vessel, the order things go in, how it finishes. For example: heat oil in a large pan over medium high; brown the sausage, add peppers and sauce; serve over rice. One card per bag is all the box was doing.

How long the prepped bags keep

Raw protein portioned days ahead is a food-safety question, so these numbers are USDA's. It calls 40 F to 140 F the danger zone, because bacteria can double in number in as little as 20 minutes in that range, per the USDA danger zone page. Cooked poultry keeps 3 to 4 days refrigerated, per the cold storage charts, and leftovers should be reheated to 165 F. For anything raw or mixed, check the leftovers storage guide by food type. When in doubt, throw it out.

DIY spice blends, the part everyone starts with

Spice blends are where most people begin, and the smallest saving here. Mixing from jars you own beats paying for tiny sachets and lets you control the salt, but it was never the part costing $76 a week. Make the two blends you use often and write the ratio on the jar.

A worked week

A five-dinner week for two. The last column is what recipe blogs skip.

DinnerProteinVegetablesPantry itemsWhat is left over and what uses it up
Chicken tacosChicken thighsCabbage, onion, limeTortillas, taco seasoning, oilCabbage, into Friday slaw
Sausage pastaItalian sausagePeppers, onion, garlicPenne, canned tomatoes, oilOnion and sausage, into rice bowls
Rice bowlsEggs, leftover sausageCarrots, peas, scallionsRice, soy sauce, oilRice, into a fried rice base

The overlap is the method. Repeating ingredients on purpose turns remainders into a plan instead of waste.

Where an app removes the arithmetic

Paper works fine for one week. It gets tiring by week four, adding the same columns with different numbers and no memory of what is in the cupboard. A pantry-aware planner holds the dinners, checks them against what you own, and produces one list of the gaps.

Well Stockd Free covers most of that loop: about 3,950 meal-kit-style recipes, inventory with expiry tracking, can-make matching, the shopping list with a one-tap Walmart cart, cook mode, 2 lists and unlimited own recipes. The planner is Pro, at $7.99 a month or $79 a year on pricing, with a 7-day trial that starts when you confirm your email and needs no card. You end up with the kit system without the truck.

FAQ

How do you make your own meal kit at home?

Pick five dinners, buy the exact quantities on one list, portion one bag per meal, and write a short method card for each. The quantities take practice.

How do you meal prep like HelloFresh?

Copy the system, not the recipes. Fix a small set of dinners, portion the ingredients per meal, and cook from a three-line card.

Is there a meal kit without a subscription?

Yes, if you build it. Plan the dinners, shop one list, prep the bags at home. Nothing ships and nothing renews.

Does HelloFresh have an app?

We have not checked HelloFresh's current app listing, so look at the App Store or Google Play. Once you leave the box, you want an app that holds your dinners, inventory and list.

How long do prepped meal kit bags last in the fridge?

Follow USDA guidance. Cooked poultry keeps 3 to 4 days refrigerated and perishable food must return to the fridge within two hours. For raw bags, check the storage charts by food type. When in doubt, throw it out.
