Vegan substitute for Worcestershire sauce: what to use

How to make the vegan Worcestershire sauce swap

  1. Measure 1 tablespoon ketchup and 1 tablespoon apple cider vinegar into a small bowl.
  2. Add 1/2 tablespoon soy sauce, or tamari if you're avoiding wheat.
  3. Add a dash of hot sauce and a small pinch each of onion powder and garlic powder.

  5. Use it 1:1 anywhere the recipe says Worcestershire. Refrigerate what's left and use it within a week.

What changes in Worcestershire sauce when you drop the anchovies

Anchovies are in Worcestershire for glutamic acid, the compound behind its savory backbone, per Tasting Table. The swaps that work best carry their own glutamate: soy sauce, miso and dried mushrooms. Tasting Table puts dried shiitakes at nearly twice the glutamate of anchovies with almost no sodium, which is why shiitake liquid tastes thin until you add salt.

Texture barely moves, since Worcestershire is thin and so is every swap here. The balance is what shifts. Straight soy sauce reads salty and flat, straight balsamic sweet and sour with no salt behind it. The pantry blend hits all three Worcestershire notes: sweet tomato, acid and fermented savory.

When not to substitute for Worcestershire sauce

If Worcestershire is the flavor people came for, buy a vegan bottle rather than improvise. A Bloody Mary or a long-standing steak marinade leans on that specific tang, and a one-ingredient stand-in tastes like a different drink. Colorado State University Extension's fact sheet also lists 1 teaspoon of bottled steak sauce for 1 teaspoon of Worcestershire, though steak sauce is another label to check for fish.

Caveats before you swap Worcestershire sauce
