Why rice is different: Bacillus cereus and cereulide

Bacillus cereus is common in rice, and its spores survive cooking. Once cooked rice sits at room temperature, those spores can grow and produce cereulide, a heat-stable toxin that reheating does not reliably destroy. University of Florida extension guidance describes the emetic toxin as heat stable up to 250 F, which is hotter than anything a home kitchen does to leftover rice (UF IFAS Extension, FDA Bad Bug Book).

Does reheating or frying rice that sat out make it safe?

No. Frying, boiling and microwaving all kill active bacteria, and none of them removes a heat-stable toxin that has already formed (FDA Bad Bug Book, UF IFAS Extension). Turning overnight rice into egg fried rice makes it hot, not safe.

How to cool and store rice properly

Cool rice fast and refrigerate it inside two hours. Spread it in a shallow container rather than leaving it heaped in the pot, because a wide, thin layer loses heat in minutes instead of hours. Cover it once the steam stops.
