Cooked rice keeps for 3 to 4 days in the refrigerator under USDA's general rule for cooked leftovers, while USDA's own FoodKeeper lists plain cooked rice at 4 to 6 days. Both numbers are USDA, and they assume different things. Use 3 to 4 days unless you know the rice was cooled quickly, sealed, and held at 40°F or below the whole time, and treat rice mixed with meat, egg, or dairy as a 3-to-4-day leftover either way. The clock starts the moment it comes off the heat, and that timing matters more than any smell test. Rice left sitting at room temperature can grow bacteria that reheating will not undo.

Those two USDA figures are a difference of scope rather than a disagreement: FSIS publishes one rule covering every cooked leftover, and FoodKeeper publishes an entry for plain cooked rice specifically. Where you cannot vouch for how the rice was handled, the shorter number is the safer one. The freezer number is about quality, not safety. Frozen rice stays safe far longer, but the texture starts to suffer after roughly six months.

How to tell if cooked rice has gone bad

Check for these before you reheat:

  • A sour or off smell
  • A slimy or sticky film that was not there when you cooked it
  • Any visible mold or discoloration
  • Rice that has dried out and gone hard (that one is usually just staleness, but toss it anyway if it is past day four)

The worst risk does not show up on that list. Bacillus cereus, the bacteria behind most rice-related food poisoning, can leave a toxin that does not change how the rice looks or smells. So if a batch sat out overnight, or you cannot remember which day you cooked it, throw it out even if it seems fine. The clock is a more reliable guide than your nose.

How to store cooked rice so it lasts

  • Cool it quickly. Spread it on a tray or move it into a shallow container and get it in the fridge within 2 hours of cooking.
  • Use a shallow airtight container so it chills evenly instead of staying warm in the middle.
  • Keep your fridge at or below 40°F.
  • Reheat only the portion you plan to eat, and heat it until it is steaming, 165°F.

Can you freeze cooked rice?

When in doubt, throw it out

USDA guidance here is blunt, and worth repeating. If you are not sure how long rice has been in the fridge, or it spent the night on the counter, do not gamble on it. Reheating handles some bacteria, but not the heat-stable toxin Bacillus cereus can leave behind. A few cents of rice is not worth a night of food poisoning.
