Freezer Dump Meals: How to Make, Freeze and Cook Them Safely
What freezer dump meals are, how to assemble and freeze them, five sample bags, and how to thaw and cook them safely (USDA/FSIS), especially raw meat.
Freezer dump meals are dinners you assemble raw in a freezer bag, freeze, thaw in the refrigerator, then dump into a slow cooker or pot on the day you cook. The one rule that keeps them safe: thaw the bag first. USDA says to always thaw meat or poultry before slow cooking.

One prep session can fill the freezer with weeks of dinners, and cooking day takes about five minutes of effort. The catch is that assembly and thawing both matter for safety, especially when the bag holds raw chicken or ground meat.
What are freezer dump meals?
A dump meal is a bag of raw or lightly prepped ingredients (meat, vegetables, sauce or seasoning) sealed together and frozen flat. The name comes from the cooking step: you empty the thawed bag into the pot and let the heat do the work. Some people call them freezer-to-slow-cooker meals or dump bags.
They differ from freezing a finished meal. A dump bag is raw, so it carries the same food safety rules as raw meat. If you want an app for prep day, see the best meal prep app options. If you'd rather freeze dinners you've already cooked, see our guide to meals that freeze and reheat well.
How do you make freezer dump meals?
You'll need gallon-size freezer bags, a permanent marker, a sheet pan, and a few hours.
- Label every bag first, while it's empty. Write the meal name, the date and the cooking instructions, such as "thaw in fridge, cook on low."
- Chop the vegetables and mix the sauces before you touch raw meat.
- Fill the meat-free bags first, then the ones with raw meat. Wash your hands for 20 seconds after handling raw meat and use a separate cutting board for it, as FSIS advises (see also its cutting board guidance).
- Press out as much air as you can. Air in the bag leads to freezer burn, which makes food dry in spots but doesn't make it unsafe, according to USDA.
- Lay the bags flat on a sheet pan in a single layer to freeze. Once solid, stack them like files.
Freeze food fast. USDA says food two inches thick should freeze through in about two hours, and that you shouldn't stack packages until they're frozen solid.
What goes in a freezer dump meal, and what stays out?
Saucy, sturdy dishes hold up. Foods that go watery, mushy or grainy belong in the pot on cooking day instead. The National Center for Home Food Preservation lists what doesn't freeze well.
| Put in the bag | Add on cooking day |
|---|---|
| Raw chicken pieces, ground beef, pork, sausage | Cooked pasta and rice (they turn mushy frozen alone) |
| Onions, peppers, carrots, canned tomatoes, beans | Milk sauces, cream and sour cream (they separate) |
| Broth, salsa, barbecue sauce, spice mixes | Cheese or crumb toppings (they go soggy) |
| Frozen vegetables | Boiled or baked potatoes (soft and crumbly after freezing) |
What is a sample set of freezer dump meals?
Here are five bags that cover a week. These are ideas, not tested recipes. Season them to your taste and follow your slow cooker's manual for timing.
| Bag | What goes in | Add on the day |
|---|---|---|
| Salsa chicken | Chicken thighs, salsa, corn, black beans, taco seasoning | Serve over rice or in tortillas |
| Italian sausage and peppers | Sausage, sliced peppers, onion, canned tomatoes | Serve on rolls or over pasta |
| Beef chili | Ground beef, beans, canned tomatoes, onion, chili powder | Shredded cheese |
| Teriyaki chicken | Chicken thighs, garlic, soy sauce, honey, frozen stir-fry vegetables | Cook rice |
| Pulled pork | Pork shoulder, barbecue sauce, onion | Buns and slaw |
Pork and beef roasts take longer to thaw, so move those bags to the refrigerator a day or two ahead. FSIS says most foods need a day or two.
How long do freezer dump meals last in the freezer?
Food kept at 0°F stays safe indefinitely. Times are about quality. Use the numbers below as the upper end. Our own rule of thumb, not a USDA figure, is to use mixed bags within about 3 months.
| Raw ingredient | Best quality in the freezer |
|---|---|
| Chicken pieces | 9 months |
| Ground beef, pork or poultry | 3 to 4 months |
| Beef, pork or lamb roasts | 4 to 12 months |
| Raw sausage | 1 to 2 months |
These come from the FoodSafety.gov cold food storage chart. A bag holds vegetables and sauce, so the weakest ingredient sets the clock: use bags with raw sausage within 1 to 2 months and the rest within 3. Bags frozen with air in them will develop freezer burn sooner. Whole birds have their own timeline, see how long frozen turkey lasts.
How do you thaw and cook freezer dump meals safely?
- Thaw in the refrigerator. Set the bag on a plate or in a dish the night before, in case it leaks. Small amounts such as a pound of ground meat or boneless chicken need a full day, according to the FSIS thawing guide.
- In a hurry, submerge the sealed bag in cold tap water and change the water every 30 minutes. Cook it immediately after.
- Microwave thawing works, but cook right away. Some areas can warm into the danger zone.
- Never thaw on the counter, in hot water, in a garage or in a dishwasher.
- After a refrigerator thaw, ground meat, stew meat and poultry stay good for another day or two before cooking, and red meat cuts for 3 to 5 days.
For the slow cooker, FSIS says to thaw meat and poultry first, start with a clean cooker, and keep the lid on. It also suggests setting the cooker on its highest setting for the first hour, then dropping to low, though it's safe to cook on low the whole time. Dishes with high moisture, like chili, soup, stew and spaghetti sauce, suit a slow cooker best.
If the bag is still frozen and dinner is tonight, skip the slow cooker. FSIS says it's safe to cook raw meat and poultry from the frozen state, and that it takes about 50 percent longer than cooking thawed food. Use the stove or the oven, and check with a thermometer: poultry to 165°F, ground meats to 160°F, and beef, pork or lamb roasts to 145°F with a 3-minute rest, per the FSIS temperature chart.
Leftover dump meals follow the usual rules. Refrigerate within 2 hours in shallow containers, eat within 3 to 4 days, and reheat to 165°F on the stove, in the microwave or in the oven. FSIS says not to reheat leftovers in a slow cooker. Use the slow cooker only to keep already-hot food at 140°F or above. If the power goes out while you're away, throw the food away.
When in doubt, throw it out.

FAQ
Can you put freezer dump meals in the slow cooker frozen?
No. USDA says to always thaw meat and poultry before putting it in a slow cooker, because a slow cooker can take several hours to reach a safe, bacteria-killing temperature and frozen food only lengthens that wait. Thaw the bag in the refrigerator first, or cook it from frozen on the stove or in the oven.
Can you cook a freezer dump meal in the bag?
No. Freezer bags are made for freezing, not cooking, so empty the thawed contents into the pot. Thawing first matters too: FSIS says to thaw meat and poultry before it goes in a slow cooker.
Can you refreeze a thawed freezer dump meal?
Yes, if it thawed in the refrigerator. FSIS says food thawed in the fridge can be refrozen without cooking, with some loss of quality. Anything thawed in cold water or the microwave must be cooked first, and nothing that sat out for more than 2 hours (1 hour above 90°F) should be refrozen.
